We make a very small amount of top quality extra virgin olive oil from our beautiful olive trees on the estate. We grow only the premium Tuscan varieties, Leccino, Frantoiano and Moraiolo, which ripen so perfectly in the Upper Maremma. The olives are pressed using the traditional cold-pressing method and only the first pressing goes into the Biserno oil.

The pure, intense, spicy flavours are best enjoyed with the simplest foods - with bread, on tomato bruschetta and over grilled vegetables.
